This recipe for lentil soup is a favourite on our yoga retreats and I always get asked for the recipe so here it is…
2 cups washed lentils (brown or green)
2 cups pumpkin, finely sliced and chopped
1 onion, finely chopped
1 red capsicum, finely chopped
2 garlic cloves, crushed and chopped
1 chilli, finely chopped (optional)
1 tsp. coriander powder
1 tsp cumin powder
½ tsp curry powder
1 tbsp Himalayan pink salt
1 tsp ground pepper
2 tsp soy sauce
¼ cup olive oil
Place lentils and enough water to cover in a saucepan and bring to the boil. Add all the other ingredients and keep it on the boil.
Add soy sauce and the olive oil and mix. Add more water (2 cups, depending on freshness of lentils or if it looks too thick) and keep on the boil for 20 minutes. Adjust spices, if necessary.
If you want it creamier, add more pumpkin or sweet potato.
